Summary
A Water Rating is a rating of the danger of water in certain Maps. Some maps contain lethal water and others contain safe water - a symbol indicating water lethality is present on map loading screens. Swimming in maps with safe water will reduce an oxygen meter before dealing damage, which can be slowed by using items such as a snorkel. Maps with dangerous water will outright kill you. Some maps don't contain water and others have freezing water that damages you in increments.
Safe Water
If you enter the water in any of these maps, there is no fear of dying instantly. However, you will still need to get out of the water in time or else you will drown. This does not apply in Papa Squid's Treasure where you can swim in the water forever (since the map is considered underwater).
Lethal Water
If you touch the water in any of these maps, you will die instantly. Shoot'em Up Town is not included here because it uses a different water style than any other map with water.
No Water
These maps do not contain any water in them, so they are listed here. Shoot'em Up Town is listed here because it uses "water" that you can fall through into the void, but it isn't lethal so you can save yourself with a Jetpack or Duck Mount.
Cold Water
If you touch the water in any of these maps, you will take damage for every second you are in the water. Earlier maps (Rhi-snow Territory and Yeti's Cave) dealt 2 damage per second that you were in water. Later maps deal 10 damage per second that you are in water.
Despite being in a Christmas event, Return of the Yeti uses safe water, likely to lower the difficulty of the boss fight.

Lava
This isn't even water at all, but is listed on some maps as the water rating. Once touched, your body parts will burn, turn black and fall off. If your torso is burned, you die.
Pumpkinator's Bootcamp and Pumpkinator's Stronghold used a safer version of lava in which you have one body part at a time burnt off. However, if your torso touches the lava, you will die. In all other versions, all body parts that touch lava are burnt.
Because Lord Pumpkin Jr., Pumpkinator's Stronghold, Pumpkinator's Revenge, and Molten Complex each take place inside a volcano, you could refer to the lava on these maps as magma. Additionally, King Crab II and R2DA Wipeout III contain magma, so they are listed here. King Crab II uses the safer version of lava for its magma while R2DA Wipeout III uses the more lethal version.
